Chocolate is an absolute must for most of us on a ketogenic diet. Even if we’re using high cocoa versions of chocolate, we can still make it better by adding sweetener or adding cream (or both)!
I used ChocoPerfection chocolate bars, which don’t need any extra sweetener added. They’re absolutely delicious and some of the best low carb chocolate I’ve ever tasted.
The maker uses only the best ingredients she can find, including European chocolate, which really show through in the chocolate bars. They’re a bit expensive but I think for a special occasion they are well worth it. You can find them on her website: ChocoPerfection.
When chocolate is on a double boiler, you have to be attentive to it. It can seize up, or worse…burn. When you’re adding cream to chocolate you also have to be careful. If you add too much at once it can seize up. Be careful with the amount you add, and only add a little bit at a time when you first start.
If you’re using bakers chocolate or very high cocoa chocolate, you may need to add sweetener to this also. Keep that in mind – you want to have a nice and sweet, almost milk-chocolate like flavor. You can make this chocolate into bars if you lay it into a container to cool. The end result will be a milk-chocolatey bar with the right amount of sweet and a low carb count. If you are adding sweetener, I suggest using Swerve Confectioners Sweetener.
Yields 15 tablespoon servings of Low Carb Chocolate Ganache.
The Preparation
- 3 1/2 ounces low-carb dark chocolate, such as ChocoPerfection
- 2 tablespoons heavy whipping cream, optional
The Execution
1. Get some water in a pan and put it on the stove to boil on medium heat. Make sure that your water is at a low enough level so that it DOES NOT touch the mixing bowl you’ll put on top.
2. Put your chocolate into the mixing bowl.
3. Put the mixing bowl on top of the pan with water in.
4. Stir the chocolate while it is melting.
5. Continue to stir it, you can’t leave it alone for too long otherwise it will burn.
6. Once the chocolate is melted completely, you are good to go. You can use it now or you can add cream.
7. If you want to make it into creamier chocolate, you can add 2 Tbsp. cream at this stage.
8. Continue stirring it well until it is combined.
This makes a total of 15 servings of How-To: Low-Carb Chocolate Ganache. Each serving comes out to be 33 calories, 3.4g fats, 1.4g net carbs, and 0.1g protein.

How-To: Low-Carb Chocolate Ganache
Ingredients
- 3 ½ ounce low-carb dark chocolate such as ChocoPerfection
- 2 tablespoon heavy whipping cream optional
Instructions
- Bring water to a boil in a pan over medium-high heat. Don't fill it all the way — make sure to leave enough room to ensure that the water does NOT touch the mixing bowl placed on top. Place the chocolate in a mixing bowl.
- Balance the mixing bowl on top of the pan of boiling water.
- Continually stir the chocolate as it melts, taking care not to let it burn.
- Once the chocolate is melted, add in the heavy whipping cream a little at a time and continue stirring until well combined.
- Serve and enjoy!
