As the name suggests, our easy keto French toast recipe is super quick to make. All you need to do is make a small loaf of mug bread, then follow the same process as making a traditional batch of French toast. Easy as that! 

Here’s how to cook this lovely dish. You start by making mug bread which can be done by mixing all of the dry ingredients in a bowl and then adding eggs. Then microwave the mixture for a few minutes to cook the bread. 

Once the bread is ready, you can turn it into French toast. Coat the bread in a batter of egg, cream, and cinnamon and then fry it up until the toast is golden brown on both sides. Once ready, it’s time to serve and enjoy.

The Preparation

90-Second Mug Bread:

  • 2 tablespoons almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon allulose
  • 1 1/2 teaspoons baking powder
  • salt, pinch
  • 1 tablespoon butter
  • 2 large egg
  • 2 tablespoons heavy cream

French Toast Batter:

  • 2 large egg
  • 2 tablespoons heavy cream
  • 1/2 teaspoon ground cinnamon
  • salt, pinch
  • 2 tablespoons heavy cream
  • 2 tablespoons low-carb maple syrup, to serve

The Execution

1. Gather and prep all ingredients.

2. In a mug or microwave-safe bowl, add the dry ingredients of the mug bread. Stir to combine the almond flour, coconut flour, allulose, baking powder, and a pinch of salt.

3. Next, add the wet ingredients of the mug bread. Stir the butter, eggs, and heavy cream in. Mix well and try to get a smooth mixture.

4. Microwave on high for 90-120 seconds. You want the bread to be just set in the middle. If the bread is not done, microwave in 15-second intervals until done.

5. Once the bread is done, combine the ingredients to make the French toast batter. Mix to combine the eggs, heavy cream, cinnamon, and salt.

6. Slice the mug bread into pieces and dip into the batter. Make sure to get batter on both sides, liberally coating.

7. Add butter to a pa over medium heat. Once butter is melted and bubbling, add french toast pieces and fry on each side until browned, about 1-2 minutes per side.

8. Serve while hot, drizzling sugar-free maple syrup over the top. Enjoy!
