Bacon, lettuce and tomatoes – three things that are delicious in a sandwich! Today, we are deconstructing it into a salad with a nice mayonnaise-based garlic dressing. It can’t get any better than this.
Now, you don’t have to use iceberg lettuce for this recipe. In fact, most BLT’s come with romaine, but using iceberg lettuce gives it a nice crisp and crunch. The dressing can be altered as well – add some hot sauce for a big kick or a tiny bit of powdered sweetener to really bring out the apple cider vinegar.
This salad is super easy to make and great for summer nights. Want to save it for work? It will stay great in a reusable container – but better keep that dressing separate. You don’t want it to get soggy.
Yields 6 servings of Keto BLT Salad
The Preparation
Salad:
- 500 grams iceberg lettuce
- 6 slices bacon
- 3 small fresh tomatoes, diced
- 1/4 cup green onion, sliced
- 1/2 cup cheddar cheese, shredded
Dressing:
- 6 tablespoons mayonnaise
- 3 tablespoons sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/2 teaspoon paprika
- 1/2 tablespoon apple cider vinegar
- 1/2 teaspoon fresh dill
- 2 tablespoons water
The Execution
1. In a pan, cook your bacon on medium.
2. While your bacon cooks, place your iceberg lettuce, tomatoes, & green onions into a salad bowl.
3. In a smaller bowl, mix together your dressing ingredients, add water for desired consistency.
4. Chop up the cooked bacon and add it into the salad bowl and toss.
5. Serve and top with cheddar cheese & dressing.
This makes a total of 6 servings of Keto BLT Salad. Each serving comes out to be 223 calories, 20.3g fats, 4.1g net carbs, and 5.3g protein.
