Ingredients
  

  • 16 ounce boneless, skinless chicken thighs
  • 1 cup mozzarella cheese shredded
  • 1 large egg
  • 1 teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoon butter
  • 40 gram celery
  • 1 tablespoon sour cream
  • 3 tablespoon hot sauce
  • 1 ounce blue cheese crumbled
  • 15 gram green onion

Instructions
 

  • Preheat oven to 400F. Grind up the chicken thighs using the blade attachment on a food processor. Transfer to a large mixing bowl.
  • Add half of the shredded mozzarella, egg, oregano, pepper, and salt to the mixing bowl.
  • Mix the chicken crust together until the shredded cheese is well incorporated into the "dough."
  • Line a pizza pan or large baking sheet. Spread the chicken mixture out in the pan using a spoon. Bake for 25 minutes, or until the crust is cooked through and beginning to brown on top.
  • Meanwhile, melt the butter in a skillet. Finely dice the celery and cook until wilting and starting to brown.
  • In a small bowl, combine the sour cream and 2/3 of the hot sauce.
  • Remove the crust from the oven once finished. Spread the sauce mixture over the base of the crust. Layer with the cooked celery, remaining mozzarella, and blue cheese crumbles.
  • Bake for another 10 minutes, until the cheese is melted and turning brown. Broil for a few minutes until beginning to crisp, if desired. Remove from the oven, drizzle the remaining hot sauce on top, and garnish with the green onion.
