Ingredients
  

  • 12 ounce chicken sausage
  • 6 ounce cremini mushrooms
  • 3 cup spinach
  • 10 large egg
  • 1 tablespoon ranch dressing
  • 2 teaspoon hot sauce
  • ½ teaspoon all-purpose seasoning such as Mrs. Dash
  • 1 ½ cup cheddar cheese shredded

Instructions
 

  • Preheat oven to 400F. Thinly slice the sausages and mushrooms.
  • Start by adding the sausages to a cast-iron skillet over medium-high heat — wait until the cast iron is thoroughly heated through before adding the sausages.
  • While the sausages are cooking, chop up the spinach. Just a rough chop will do; no need to get fancy.
  • When the sausages are crisp on one side, flip them over and add the mushrooms and spinach.
  • While the spinach and mushrooms are cooking, crack the eggs into a container and add the ranch, hot sauce, and seasoning. Whisk together well.
  • Mix the sausages, spinach, and mushrooms to enable the spinach to wilt fully. Add salt and pepper to taste.
  • Once the spinach is fully wilted, add the cheese on top.
  • Pour the eggs over the mixture and mix everything together well. Make sure that the eggs are touching the bottom of the pan — lift the other ingredients if needed.
  • Let the mixture cook for a moment and then place the cast-iron skillet in the oven. Bake for 10 minutes, then broil for 3–4 minutes.
  • Remove from the oven and let cool for 10 minutes. Slice and serve!
