Ingredients
  

  • 10 ½ ounce pork belly thinly sliced
  • 1 teaspoon salt
  • 1 tablespoon butter
  • ¼ large onion diced
  • 4 tablespoon heavy whipping cream
  • 1.76 ounce blue cheese
  • black pepper to taste

Instructions
 

  • Turn oven to its highest setting on bake or fan forced, if you have it. Somewhere around 475F is what we are looking for.
  • Take the pork belly strips and place in an ovenproof dish. Rub in the salt (fine salt like table salt works best). Ensure the pork belly is covered in a thin layer of salt. Bake the pork strips for approx. 30-45 minutes. Keep an eye on them; you need to cook them enough while not burning them. They will turn a lovely crispy golden brown color and you will see the fat will render out.
  • In a saucepan begin to melt the butter over medium heat, then add diced onion. You want to caramelize the onions slowly, so they are translucent and nice and sweet.
  • Once the onion is cooked, keep the heat on medium and add the cream.
  • Once cream is warmed through, crumble the blue cheese in and wait for it to melt.
  • When the cheese is melted increase to high heat for a minute or two, then pour into a dish.
  • Take the pork out of the oven and allow to cool on a paper towel. Cut into bite size pieces.
  • Serve with sauce and enjoy!
