In a small mixing bowl, combine the almond flour, baking soda, baking powder, salt, and granulated sweetener.
Add the butter to a microwave-safe container. Microwave the butter for 20–25 seconds to allow it to melt. Set aside.
In a bowl, mix together the butter, orange juice, orange zest, orange extract, and vanilla extract.
Whisk the eggs in a separate container.
Slowly add the dry ingredients to the wet ingredient mixture. Once combined, add the chocolate.
Add the eggs and fold the chocolate chunks into the mixture. The batter should glisten with moisture once everything is mixed well.
Preheat oven to 350F. On a baking sheet, shape the dough into a large rectangle. Keep in mind that the flatter it is, the dryer and crispier the cookies will become on the inside.
Cut the dough into even rectangles, ensuring that they are spaced evenly.
Bake for 20–22 minutes or until golden brown.
Let them cool for 10 minutes, then serve and enjoy!
