Preheat oven to 400F. Create the bacon weave and place in the oven for 25 minutes.
After it's been cooking for about 15 minutes, we can get started on the eggs.
Crack the eggs into a container. Add in the heavy cream (half a tablespoon per egg).
Whisk until well combined.
Wait until the bacon weave is cooked. It should look pretty brown by the time it's finished.
Transfer the bacon weave to a paper towel to cool and drain off any excess grease, making it crisper.
Create a funnel using the piece of foil used to cook the bacon. We'll be using some of this bacon grease to cook the eggs and spinach.
Pour the bacon grease into a pan over medium-high heat.
Add the spinach to the bacon grease and stir. Allow the spinach to cook and then turn the heat down to medium-low. Add the eggs and seasoning and do not touch them.
Once the eggs have cooked on the bottom, mix them up. They should be a bit moist rather than overcooked and rubbery.
Lay the eggs on top of the bacon weave. Try to place them as evenly over the bacon weave as possible, leaving a slight overlay of the bacon at the bottom. Add the cheese on top once the eggs are properly set.
Transfer the bacon weave to a foil-lined baking sheet. Set the oven to broil.
Broil the bacon weave and eggs for about 3 minutes under the highest or second-highest setting.
Cut into slices.
