  • 1 cup frozen spinach thawed
  • ¼ cup heavy whipping cream
  • ½ medium avocado
  • 4 tablespoon butter
  • ½ cup sour cream plus extra for topping
  • ½ teaspoon salt
  • black pepper to taste

Instructions
 

  • Combine the cauliflower and spinach in a microwave-safe bowl or saucepan and cook until cauliflower is very tender, about 15 minutes.
  • Add in the cream, avocado, butter, sour cream, and seasonings, and blend until smooth using an immersion blender or food processor.
