Ingredients
  

  • 4 ounce prosciutto
  • 8 ounce fresh mozzarella cheese
  • 2 tablespoon olive oil
  • 6 ounce spring mix
  • salt and pepper to taste

Instructions
 

  • Layer half of the prosciutto slices vertically. Lay the remaining slices horizontally across the first set of slices.
  • Place your mozzarella ball, upside down, onto the crisscrossed prosciutto slices.
  • Firmly, but very carefully, wrap the mozzarella ball with the prosciutto slices.
  • If making ahead, wrap the balls in cling film and refrigerate.
  • Heat the olive oil in a skillet and crisp the prosciutto on all sides. To serve, place over a bed of spring mix greens and drizzle the remaining oil in the pan over the greens. Season with salt and pepper to taste.
