Waffles: ½ cup almond flour 2 tablespoon flaxseed meal ⅓ cup unsweetened carton coconut milk 2 large egg 1 teaspoon vanilla extract 1 teaspoon baking powder 2 tablespoon stevia/erythritol blend such as Swerve 7 drop liquid stevia Filling: 3 ounce brie cheese double cream 2 tablespoon butter 1 tablespoon stevia/erythritol blend such as Swerve ½ cup raspberries 1 tablespoon lemon juice 1 teaspoon lemon zest
Mix together all of the waffle ingredients in a large mixing bowl. Make sure that the consistency is smooth and without any lumps.
Heat up a waffle maker and pour in the batter once hot. Allow it to cook until the indicator goes off or by using the steam method I described.
Remove the waffles and let cool slightly.
Slice the brie and lay it on top of the waffles while still warm to help bring the brie to room temperature.
In a pan on the stove, heat up the butter and sweetener. Optional: Use a spice grinder to powder the sweetener for better texture.
Once the butter is beginning to brown and the sweetener is dissolving, add in the raspberries, lemon juice, and lemon zest.
Continue to stir the mixture until bubbling and jamlike in consistency.
Broil the waffles until they're slightly crisp and the brie has melted.
Assemble the waffles with the raspberry filling and brie. Place in a pan and toast for 1–2 minutes per side.
