Ingredients
  

Waffles:

  • ½ cup almond flour
  • 2 tablespoon flaxseed meal
  • cup unsweetened carton coconut milk
  • 2 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 tablespoon stevia/erythritol blend such as Swerve
  • 7 drop liquid stevia

Filling:

  • 3 ounce brie cheese double cream
  • 2 tablespoon butter
  • 1 tablespoon stevia/erythritol blend such as Swerve
  • ½ cup raspberries
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions
 

  • Mix together all of the waffle ingredients in a large mixing bowl. Make sure that the consistency is smooth and without any lumps.
  • Heat up a waffle maker and pour in the batter once hot. Allow it to cook until the indicator goes off or by using the steam method I described.
  • Remove the waffles and let cool slightly.
  • Slice the brie and lay it on top of the waffles while still warm to help bring the brie to room temperature.
  • In a pan on the stove, heat up the butter and sweetener. Optional: Use a spice grinder to powder the sweetener for better texture.
  • Once the butter is beginning to brown and the sweetener is dissolving, add in the raspberries, lemon juice, and lemon zest.
  • Continue to stir the mixture until bubbling and jamlike in consistency.
  • Broil the waffles until they're slightly crisp and the brie has melted.
  • Assemble the waffles with the raspberry filling and brie. Place in a pan and toast for 1–2 minutes per side.
  • Enjoy!
